Roasted Red Pepper Pesto

* This pesto is one of my favorite all around sauces! You can slather some on a piece of fish for the grill or oven, mix it with fresh pasta (from Pasta Puttana) or even use it as a dip for veggies! Heck, it's probably even good on chicken!
* You can make a batch and keep it in your refrigerator for up to a week. I know you will find something to put it on.

Ingredients

* 2 tablespoons fresh garlic, chopped
* 1 1/2 cups roasted red peppers, roast your own or use jarred variety.
* 1 cup fresh basil leaves, lightly packed
* 1/2 cup pine nuts
* 1/2 cup extra virgin olive oil
* 1 cup parmesan cheese, grated
* 1 teaspoon kosher salt
* 1 teaspoon black pepper

Directions

* Combine garlic, peppers and basil in food processor, process until finely chopped. Add pine nuts and parmesan cheese, blend until smooth. While machine is running, slowly drizzle in olive oil. Add salt, pepper and process. Scoop into bowl and you are ready for...
